Primorsky chefs at the exhibition “Russia” about delicious pollock put in the word
The program of the almost six-hour gastronomic performance included a presentation of the festival itself, culinary master classes on cooking and tasting. Chef Alexei Belchik (Coffee Machine), Egor Anisimov and Andrey Jena (Zuma restaurant), Alexander Kazakevich (Millionka restaurant), Vladimir Kozhevin (Kantina restaurant) shared with the guests of the event their developments and secrets, ideas about cooking Pollock dishes. Such recipes certainly do not exist in cookbooks or on the Internet. The chefs' creative approach is evident. The declared dishes became proof that pollock is a fish “serious”, dishes from it are tasty and useful, and even high cuisine pays attention to it. In general, fish is not for cats, this is for sure!
The festival, where pollock dictates, is very necessary for us all. The fish is not recognized, it is not fully appreciated by the consumer. Pollock has a huge gastronomic potential, and it must be developed, moved to the masses, come up with new dishes. Thanks to the festival, we will only move forward in this direction. It's important to me. Cooking from pollock is an opportunity to experiment, fish is not easy, you need to be able to work with it, so it is also the knowledge of something new, - says Alexander Kazakevich (restaurant "Millionka").
Guests were offered wrappertons of pollock cold smoking with garlic, crispy tubes with Far Eastern pollock and cream sauce, pollock hot smoked in glaze, with sea grapes and saus, even with mint and mint. It is worth admitting that gastro festivals with a “sea” bias give the opportunity for chefs to be creative. This is how unusual dishes are born. The same ice cream from pollock can be ordered in Millionka. Cheers. First they look at it as exotic, and then they ask you to repeat it. Now this recipe has “stepped” beyond the borders of Primorye, the secret of cooking has become known to all guests of the gastro venue.
Regional gastronomy and local products occupy an important place in promoting the tourist potential of the region at various venues, allowing to promote not only Primorye, but the entire Far East as a whole. In May 2024, the festival of pollock “O! Mega Taste!” will be held in restaurants of the Far East, and from 24 to 26 May the street part of the gastro event will take place. Its organizers are the government of the Primorsky Territory, the Tourist Information Center of Primorye (Visit Primorye), the Russian Fishery Company and the Gastronomy Map of Russia.
