Vladivostok schoolchildren told how to combine in one dish the cuisine and traditions of different countries and gastronomic cultures

New classes appeared in a number of schools in Vladivostok. The schedule includes lessons of Far Eastern cuisine. Their goal is to demonstrate the gastronomic possibilities of Primorye, a variety of local products that symbolize the geography and history of the region and the city on the shore of the Golden Horn. As teachers, mentors are chefs of a number of restaurants of the Far Eastern capital, who managed to establish themselves at various venues of event and exhibition events while promoting the tourist potential of Primorye.    

The first lesson of Far Eastern gastronomy was held on October 16 at students of the MBEU Education Center "Vector". 21 ninth-graders took part in the master class. The guys cooked sativi with a scallop. This process was led by the chef of the Georgian restaurant "Supra Meore" Ilya Zubakin.

In the original sativi - either cold sauce or a full-fledged dish in which boiled poultry is served under this sauce. But Vladivostok is famous for its creative approach, and the bird was replaced by the well-known seafood – scallop. At the time of the master class, the geography office turned into a real restaurant kitchen, where, under the guidance of Ilya Zubakin, the children learned to cook a Georgian dish, but with a Far Eastern accent. Some, using the leaves of cilantro and basil, pomegranate and specially prepared green oil, were engaged in serving dishes. Along the way, students learned to work correctly with greens to preserve its freshness, taste and aroma. Another group paid attention to the processing of the scallop. The guys learned a lot about the features of this seafood and the secrets of its preparation. The third group specialized in sauce, which gave the name to the dish itself: how to use a blender, how to bring the sauce to the desired consistency, what is the order of introduction into the mass of ingredients. Important for everyone was information about the composition of the dish and how all the components interact with each other. Compliance with recipes and technologies is a sure way to success. But do not forget about the mood. Cooking does not tolerate a bad mood, so any dish, even the simplest, should be prepared with the soul. After the tasting, the students told what notes they could highlight in the taste of the cooked dish. In addition to serving rules, stories and traditions related to sativi, the principles of the restaurants themselves were touched upon during the lesson. Students were told about the profession of chef, the principle of the restaurant, dividing the kitchen into zones, specialization of catering workers, training, etc.  

The next gastro lesson is scheduled for October 25, its participants will be ninth graders of MBOU SOSH No 40. The name of the dish, which the guys will cook together with the team of chefs of the Vladivostok restaurant Cantina, will remain a mystery. So it will be more interesting perception of information and more impressions of the process.

Recall, the project to conduct gastronomic lessons in schools in Vladivostok was launched in 2023-2024 academic year. Its organizers are the Tourist and Information Center of the Primorsky Territory (Visit Primorye) and the Department for Work with Municipal Education Institutions of Vladivostok.
