Gastronomic fern festival in Vladivostok: from the age of dinosaurs to a modern table

Vladivostok is waiting for a new gastronomic festival - fern festival. The organizer of the festival is TOOMAN Restaurant, and the ideological inspirer of the delicious event was its chef Vladimir Kozhevin.

The event will be held in Vladivostok restaurants from 16 to 29 June. 11 restaurants and cafes of the Far Eastern capital confirmed their participation: the lobby bar “Randevu” and the restaurant “Hekimgan” (Lotte Hotel Vladivostok), the Helsy cafe, “Omlet Station”, “Wow, man!”, Central Twins, the pie “Baba Toma”, the restaurants “Business in meat”, “Aquamarine”, MORE Seafood bar and, of course, TOOMAN.

Ferns are like dinosaurs. Only those are no longer on our planet, and this plant is still at the root. There are more than 10 thousand species: some give the basis for legends (blooming on the night of Ivan Kupala), some please with their appearance, and some with taste. And here our applause and admiration of gourmets such a species as the ordinary eagle. By the way, this species is growing in the western regions of Russia. It's inedible, though. But in Primorye you can take a soul with a gastronomic variety of dishes, where the basis is a fern. It is dried, salted, canned, used in salads, with it you can cook shiv, extinguish the meat, bake cakes ... And the eagle fern is popular and loved in the national cuisines of our Far Eastern neighbors: Japan, China and Korea. Therefore, dishes from the cuisines of the APR countries can also be found in the festival menu. The organizers are sure that the event will appeal not only to chefs, where they will be able to once again prove and show their creative approach in cooking, but also to residents and guests of Vladivostok, who highly appreciate the gastronomic potential of the eastern borders of Russia

A prerequisite for each restaurant or cafe participating in the event is the preparation of three festival dishes with the addition of fern: hot or cold snack, salad and main. The cost of dishes is set independently.

Within the framework of the festival, a lecture hall is also planned with the participation of the Botanical Garden (to be held on June 19 at 14:00 on the territory of the Botanical Garden), a master class on fern preparation on the basis of the School of Gastronomy, a cycle of visiting master classes in general educational institutions of the Primorsky Territory.
